How do you clean beef tongue before cooking?
Place in a pot of water, add a few tablespoonfuls of vinegar and “wash” the tongue in the solution. Alternatively, rub the surface with rock salt. At this point, you can cook the tongue. But if you’re still uncomfortable, drop into a pot of boiling water, cook for about ten minutes then drain and rinse.

You can estimate about an hour per pound of tongue. You have to peel the skin off of the tongue and try not to burn your fingers in the process. The tricky thing is, if you let it cool off too much, then it gets really difficult to peel off the skin, especially from the underside of the tongue.
